What They Are For, and Why They Are Not Optional

What You Can Check, and Where to Stop
Plenty of this is safe. Look at the two indicator lights: on most makes both should be steady, and one that is out, flickering or a different color points at that side. Check that neither bracket has been knocked and that both eyes are aiming at each other. Look for green powder or discolouration at the terminals. Also, never solve the problem by moving the sensors higher: the height is specified for a reason and raising them defeats the protection.
How the Reversal Test Actually Works
There are two separate tests and it is worth knowing both, because they check different systems. For the photo eyes: with the door closing, break the beam with an object, not your hand, and the door should stop and reverse immediately. For the force-reversal system: lay a flat board on the slab in the door's path and close the door onto it, and it should reverse on contact.

When It Is the Bottom Seal
One more diagnosis worth knowing, because it saves money. If the door travels all the way down, touches the floor and then rides straight back up, that is frequently not the photo eyes at all.
It is either the down limit set slightly past the slab, or a bottom seal that has hardened with age so the door meets real resistance at the last inch and the opener reads that as an obstruction.
